Scallops in Ginger and Lime Sauce

Ingredients:

  • 1 lb. scallops (or mild fish like cod or sea bass)
  • 1/4 cup onion or shallot, minced
  • 1 tbsp. lime zest
  • 1 tbsp. fresh ginger, peeled and grated
  • 2-3 tbsp. fresh lime juice (1 large lime)
  • 2 tbsp. soy sauce
  • 1 tbsp. olive oil
  • 1/4 cup chopped fresh cilantro

Directions:

Mix together the lime zest, lime juice, soy sauce, cilantro, ginger, and onion in a small bowl. Add fish or shellfish. Stir to cover.

Place olive oil in skillet, heat and add fish and sauce. Cover and simmer until opaque (less than 10 minutes). Be sure not to overcook. Serve over rice.
