Pumpkin Loaf

Ingredients:

  • 2 cups whole wheat pastry flour
  • 2 Tbsp. canola oil 
  • 1-1/2 tsp. baking powder
  • 1/4 cup butter or margarine (4 tbsp.), softened 
  • 1/2 tsp. baking soda 
  • 1 Tbsp. grated orange peel (peel of 2 oranges) 
  • 1-1/2 tsp. ground cinnamon
  • 2 tsp. vanilla extract 
  • 1/2 tsp. salt
  • 1 cup raisins 
  • 4 large eggs
  • 2/3 cup dried cranberries 
  • 2 cups packed brown sugar
  • 1/2 cup chopped walnuts or pecans 
  • 1 15-oz. can pumpkin puree   

Directions:

  1. Preheat oven to 350 degrees.
  2. Grease a 9"x13" pan with some of the butter or margarine.
  3. Combine flour, baking powder, baking soda, cinnamon, and salt. 
  4. In a separate bowl, beat together the eggs, sugar, pumpkin, oil, butter, orange peel, and vanilla until fluffy.
  5. Add flour mixture to egg mixture a little at a time, mixing until almost combined. Stir in raisins, cranberries, and nuts just until blended.
  6. Spread batter into pan and bake for 35 to 45 minutes, until top springs back when lightly
            touched and a knife inserted into bread comes out clean. Cool in pan on rack.

Makes 24 pieces. Each piece provides about 195 calories, 3g protein, 6g fat (<1g sat), 35 mg cholesterol, 35g carbohydrate, 2g fiber, 150 mg sodium, 210 mg potassium, and 55 mg calcium.
